SPIRIT NOTES
On the neat nose, dried ginger, caramelised nuts, old-fashioned bread pudding, brandy-soaked fruit cake and a lingering oaky spiciness in the background. On the palate, heavily spiced plum marmalade but at the same time a zingy freshness combined with a sweetness from sugared almonds. Water changed the balance, sweeter and fruitier with apples and kiwi followed by a delicate perfumed floral scent. The taste was that of a red wine float, dark chocolate raspberry ice cream, red wine, sparkling water and chocolate syrup. After five years in a bourbon barrel, we transferred this whisky into a first fill barrique from a small privately owned bodega, now in its ninth generation, that focuses exclusively on the Pedro Ximénez grape.
