SPIRIT NOTES
After 11 years in ex-bourbon wood we transferred this into a heavy-toast, medium-char, second-fill hogshead. The nose delivered maple syrup, soft vanilla, attractive wood and a savoury suggestion of grilled maple-cured bacon. The silky smooth palate tasted of brown sugar, coconut cream, Oreos and a tantalising treat of tropical fruits; the finish had intriguing herbal notes and unexpected heft. The reduced nose turned even more exotic – oak shavings, old school desks and autumn leaves, lemon balm, incense sticks and a funky aroma of ripe fruit rancio. The palate pleased with a plethora of plums, peaches and pineapple, bubble gum and watermelon sweets.
