SPIRIT NOTES
The nose opens up gradually to polished wood and hay, spun sugar, brandy soaked raisins, grilled pineapple, oranges and cinnamon. The neat palate is quite a lively bundle of tastes – pine wood shavings, rhubarb crumble with custard, honey drizzled over apple slices and marmalade melted over pan-fried duck; a kick of chilli to finish. The reduced nose combines vanilla ice-cream with violet and kiwi fruit with foamy bananas – and a visit to the barbers (razor strop leather, hair oil, aftershave). The palate now delivers strawberries, white chocolate and desiccated coconut; the finish has salty pretzels, wood, leather and damson stones.
