SPIRIT NOTES
The Panel were greeted by a soft nose of petroleum jelly atop strawberry jam, raspberry jelly, milk bottle sweeties, and toffee popcorn. The palate had significant mouthfeel, with salted toffee popcorn, bubblegum candy, charred honeycomb, slapped mint leaves and an effervescent glass of soda. A drop of water offered a slice of fried bread topped with basmati rice, wrapped in sweet rice paper and crystals of pine resin. We could now taste raisin purée, orange oil, and a fried bread and manchego sandwich stuffed with salted cashews. After nine years in an ex-bourbon barrel, we transferred this to a first fill oloroso-seasoned barrique for the remainder of its maturation.
