SPIRIT NOTES

A big, chunky and aromatic rye profile brimmed immediately with burnt toast spread with lemon curd, vapour rubs, shoe polish and dried tarragon. We also found mustard oil, red liquorice, cherry syrup and Belgian fruit beers. Reduction brought sweet chai tea, limeade, orange cocktail bitters, jasmine tea and lanolin, plus tool box grease and dried exotic fruits. The palate was massive, thick and superbly rich in flavour: muscovado sugars caramelising, passion fruit syrup, blood orange, wintergreen, pumpernickel bread, roast chocolate malt and dark, boozy fruit punch. Water brought a more playful profile, with citrus cordials, spiced marmalades, mango jam, ale shandy with lemon peel, and touches of natural tar and bergamot oil.
