SPIRIT NOTES
A wonderfully inviting nose we felt, full of exotic hardwood resins, tropical fruit teas and cherry cough syrup. We also noted warm mulled cider and dense malt loaf. Reduction offered up brown bread spread with treacle, vanilla sponge pudding infused with spices, milk chocolate with sea salt, and golden syrup. The neat palate commenced with dates, strong mint tea, fruit molasses, pumpkinseed oil and a mentholated vibe that gave a cooling and mouth-soothing sensation. Water revealed a leathery quality, with dark fruits soaked in armagnac and spiced marzipan dipped in dark chocolate. This was matured in a bourbon hogshead for 13 years before being transferred to a first fill heavily toasted medium charred hogshead.
