SPIRIT NOTES
First, we noticed the colour, a very pale light champagne but that was the only thing that was light. The aroma was full on, smoky salt and vinegar crisps, oily rags and a Thai sweet chilli sauce. On the palate, as one panellist described it as a “smoked lime juice and crude oil” cocktail. Plenty of smoke but at the same time lots of sweetness – it’s in one’s face. Following dilution, we smelled brackish water, burning newspaper and a freshly fired nine-pound cannonball before we tasted smoked, sweet plum, pickled gooseberries and bit into an apple covered in volcanic ash.
