SPIRIT NOTES
The initial nose suggested cherry throat lozenges, fir wood, green walnut liqueur and fig syrup. A big, sensuous glass of PX sherry; we were smitten! With water we got marzipan, spiced chocolate, herbal liqueurs and dried cherries. The palate was big and spicy on arrival, showing lots of herbal cocktail bitters, hessian and five spice. Reduction brought a massively spicy sherry vibe along with bags of dark chocolate, cured meats and posh liquorice. Once for sherry fans undoubtedly! At 10 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
