SPIRIT NOTES
Furniture polish, red apples, watermelon sweets and aromas of crushed ivy, trampled ferns, bracken and sandalwood all presented themselves to us at first nosing, along with white pepper, fig and wee hints of honey. With a little water we found lovely notes of heather flowers, pollens, mocha milk stout beers, tangerine and aniseed, plus some flowers in vase water and a firmer note of tobacco. The neat palate displayed white stone fruits, cinnamon-flavoured flapjack, crystallised ginger, porridge sweetened with honey and a slightly medical impression of liniment. Reduction brought some leathery notes, dried mint, white tea, shilling ales and caramelised oatmeal, before some classical notes of vanilla custard and apricots.
