SPIRIT NOTES
We imagined a carpenter building a round wooden tree bench to provide comfortable seating and a shaded place to relax, which was now being treated to protect the wood with a mixture of beeswax, carnauba wax and orange oil. Plenty of heat up front like a richly spiced plum chutney or a Chinese 5 spiced Dark’n Stormy cocktail. Water added initially an ashy and slightly burnt aroma which floated away and left us with freshly peeled, slightly unripe bananas. On the palate still plenty going on, tangy new oak, marmalade, and a glass of cloudy pastis. Following eight years in an ex-bourbon barrel, we transferred this whisky into a 1st fill #4 heavy charred barrel.
