SPIRIT NOTES
Initial nosing revealed firm notes of shoe polish, banana flambéed with rum, vanilla fudge and some shy notes of cut red apple and toffee sauce. Water added some lovely aromas of aniseed, camphor, putty and bergamot, with a hint of sandalwood too. When neat, the palate was nicely spicy. Lots of shoe polish, treacle and mineral oil notes were detected, along with spiced dark-grain breads and aged ruby ales. Water brought notes of dark chocolate-coated gingers, chai tea, caramel shortbread and rolling tobacco. This was matured in a bourbon hogshead for seven years before being transferred to a second fill STR barrique.
