SPIRIT NOTES
We flip-flopped along a hot beach towards a path of limestone cobbles. Wild fennel lined the way, dancing in the breeze and intercepting an air of Seville orange and raspberry jam. On the palate we found cherries, cortado, condensed milk, and date and plum purée, with a touch of wintergreen mint, finishing on a light, fresh note. Water added toffee, crème caramel in a leather satchel, huckleberry taffy and serrano ham to the nose, while the palate promoted vanilla, dark chocolate, char sui pork-stuffed bao buns, and black cherry jam. After four years in an ex-bourbon hogshead, we transferred this to a second-fill Oloroso hogshead for the remainder of its maturation.
