SPIRIT NOTES
The nose was a curiosity shop of serendipitous surprises – chocolate on pears, orange boxes, chicory root, toasted almonds, tobacco and "sticking your head in a beehive". Tasting every bit of its age, we were bestowed oatmeal cookies, sherbet straws and honey on burnt toast; then a slightly astringent finish of lemon, chilli, ginger and oak. The reduced nose took us to a café next to a flower shop, where we munched on orange fondant chocolates, coffee cake and sugared almonds. The palate was sweet but complex – blueberry flapjacks, cinder toffee and cinnamon-dusted churros dipped in a dark chocolate sauce.
