SPIRIT NOTES
Following a vine of honeysuckle, we found green apple candy wrapped in sweet tobacco, treacle, warm honeycomb and a glass of peach iced tea on the nose. The palate oozed with apple sauce, clementines, root beer and toffee, with a texture akin to licking an oiled slab of cedar. Water gave the nose malted milk biscuits, ramen noodles with sesame oil and soy, and a side of buttered wholemeal bread. The finish was tempura batter, enoki mushrooms, pineapple and a glass of redcurrant tea. After 12 years in an ex-bourbon hogshead, we transferred this to a first fill American oak Oloroso hogshead for the remainder of its maturation.
