On the nose neat the aroma reminded us of cocoa nibs, orange peel, Turkish delight and liquorice, while to taste a hot slice of deep pan pizza topped with pineapple, caramelised red onions and pickled jalapenos. After the addition of water, we all entered the cherry mood with cherry ice cream, candied cherries, cherry doughnuts and cherries soaked in rum. We then enjoyed a raspberry spiced rum cosmopolitan using Chambord liqueur, lemon and apple juice, spiced rum and a dash of cinnamon and nutmeg. Following eight years in an ex-bourbon barrel, we transferred this whisky into a 2nd fill re-charred American oak brandy barrel.
