SPIRIT NOTES
A stunning nose! Riddled with exotic flower nectars, heather honey, pineapple cubes, tutti frutti, whisky-soaked banana bread, resinous hardwoods and waxed hessian canvass. A deep and beautiful impression of older style, aged highland malt whisky. With reduction we got rice pudding with cinnamon, flower honey, sultanas, caraway and mineral oils. Increasing complexity and more medicinal qualities emerged over time as well. The palate was initially full of exotic fruits in various guises: dried chunks, teas, smoothies, jams and oil infusions. We also found hessian and fat notes of wormwood and wintergreen! Reduction enhanced these beautiful waxy and textural qualities, bringing notes of crystallised honey, pressed wildflowers, fruity tobaccos and guava syrup. We found this one to be really stunning!
