The palate found tingling smoke (burnt sage leaves, hot stones, charred wood) but not enough to overpower the other flavours of pear tart, mango and brandy-soaked plums, or the finish of pickled ginger, sweet chilli sauce, cinnamon and clove. The reduced nose encountered caramel wafers and butterscotch, dried heather flowers, fly cemeteries and rain on a chimney.
