A walk in the country (earthy, distant wood smoke) to have tea with a friend. After dinner an opulent dessert (chocolate cake, pear frangipane tart) rounded off with a sip of calvados and a rummage in the tobacco pouch. Not a bad day, all in all. Following the addition of water, we enjoyed a sangria with honey-roasted fig and amaretto ice cream. Plenty of spice on the neat palate's sweet backbone reminded some of us of pimento from Trinidad and Tobago, perhaps added to a dark wheat beer from Bavaria – we'll ignore the purity law issue of 1516! After reduction we stayed in Germany, walking the steep, slaty slopes of a mosel vineyard in the heat of summer before sipping on peach iced tea or an iced caramel latte. Following the addition of water, we poured ourselves a wheat beer with that so familiar banana scent, while opening a box of homemade jaffa-type cakes made with marmalade-spiked orange jelly and rich dark chocolate. With water, the countryside walk took in wildflower meadows, rose gardens, elderflower and hay, and discovered even more exotic fruits. Lemon bonbons, limoncello, lemon curd, lemon drizzle cake, lemon barley water. After many groves of lemons were snuffled through, we also detected aniseed balls, virgin olive oil, and strawberries and cream. Water brought out tea tree oil, custard powder, bergamot, lemon thyme and wee minty hints. The palate, when neat, was superbly mouthcoating, with shortbread, tart au citron (more lemons, really), some peppery mace notes and ... lemon. There was plenty of spicy heat on the palate neat, coming from fiery cinnamon candy balls or traditional British aniseed-flavour gobstoppers. With the addition of water we cooked haggis and served it in a whisky peppercorn sauce. To taste, Christmas pudding came accompanied by a smoking bishop: a type of mulled wine popular in Victorian times, made using port, red wine, Seville oranges, sugar and cloves. With a drop of water we opened a bottle of vin santo, a Tuscan sweet wine with that typical aroma of ripe and dried fruits, hints of dark chocolate-covered macadamias, nutmeg and star anise, alongside roasted coffee beans.
