Wonderfully fragrant champagne and gin cocktails arrived with a plume of lavender that remained fresh with elements of mint as floral smoke wafted past. Water was added from a crystal decanter to release notes of lime chocolate and walnuts. A sense of age brought us to an old wardrobe that once housed an engine driver's overalls, still reminiscent of mothballs and damp smoke. Reduction brought custard creams, sweetened herbal teas, hyacinths and honeysuckle. The neat palate was rich with barley sugars, orange pith, lime cordial and malty red ale notes. Wee background touches of dried tarragon, chalk and travel sweets popped out too. The taste neat reminded us of baked coconut shrimps which we dipped into a creamy sweet chilli sauce – absolutely delicious and so moreish! With a drop of water we got sweets galore – jelly babies, wine gums, fruit pastilles and watermelon jelly foam slices. Dried herbs combined with oak sawdust before droplets of rain began to splash off blackberries and redcurrants and trickle down flower stems. Raindrops morphed into melted butter as they found their way to dried apricots dusted with fine sugar. The palate warmed with nutmeg led spice and a creamy demeanour that wandered through brandy butter before settling on a mixture of dark chocolate and white chocolate on puffed rice. Water beckoned floral aromas of primrose, lavender and rose but again doused by fresh droplets of rain. The reduced nose, with vanilla sugar, toffee, macaroons and incense, was warm as home-baking and sunny as Provence. The smooth palate had molasses cake, medjool dates and fruit liqueur, with date stones and chewing twigs in the after-taste. Soft and buttery notes incorporated vanilla custard and coated cinnamon and nutmeg as cocoa powder formed a dusting over marzipan and beech sap found orange zest on the finish. The toothsome palate contained chocolate ice-lolly sticks and barley sugars, spiced cherries, aniseed gobstoppers and five spice roast belly pork; coffee bean, cardamom and curry to finish. The reduced nose had ice-cream, maple syrup and waffles in an artist’s studio (or maybe an apothecary’s?) The palate now delivered poached pears with honey and clove, breakfast pancakes with black coffee and cigar box hints; stellar stuff!
